It’s Wednesday, Ugh

Usually I like Wednesdays. They’re nice. They’re halfway through the week, they spell funny, and it lets me know I actually will make it through the week. But this week is particularly awful. I’ve been sick for the past two days and not wanting to even get out of bed. (Apparently once you’re married, when you get sick, you’re pregnant.) I was overloaded with a hunk of online class that came earlier in the week than usual, memorizing a 13 (THIRTEEN!) page aria for my voice lesson and trying to figure out what my homework is that’s due tomorrow. Oh, and our house is unfinished, the dishes are piled up, I can’t seem to start exercising and the sun is in my eyes. Ohhhh, woe is me.

Clearly I’m ready for this week to be over so I can spend time with my hubs and get back to normal.

Thankfully, last night I felt well enough to get up and make dinner for once. We bought a bunch of jumbo shrimp and I decided to whip up some fettucine of sorts. After browsing some recipes online, I just decided to wing it as I almost always do.

I ended up breaking out a sauce pan and pouring in some milk and the rest of the heavy cream we had. I melted about 3 cups of sharp white cheddar, 1/4 cup of goat cheese, and 1/2 cup of cream cheese. It turned out pretty well. I think I should’ve added pepper at least. I tried adding red pepper flakes but all that dairy just cancelled it right out.

No pic of the final product. Just picture the cheese all melty and shrimp all cookedy. And mixed together.

Oh. And I made a cake today. Wanna see? Sure you do.

I showed two views because I’m pretentious. And I just had to look up that word to see if I used it correctly. And I was. Boom.

PS. Remember that audition I told you about? Well I made it into their scholarship choir. I have to decide whether or not I’m going to accept it by April 4. I wouldn’t be mentioning that unless I was thinking about not going. So, if you think about it, pray for clarity and guidance on the calling on my life!

Mic Check, Mic Check

Hello!

It’s been about a week since I’ve posted. And MAN did I miss it! Not because I wanted to, before you think I hate all 7 of my readers. I mentioned in my posts last week about glamping this past week, and that’s where I was. Camping in the middle of the woods. (In my defense, I did try to download my Bloglovin’ app, but of course, I need the newest update on my iPhone.) It. Was. Glorious. Despite the fact that it sounded like a dog pound most of the time we were there and the 5-year-old with parents who don’t know how to discipline waking us up at 6.30 in the morning screaming and playing with his fake gun and then saying later through cigarette smoke, “Oh, did we wake you? He doesn’t have his medicine.”

WHAT!? So you’re telling me that because he doesn’t have his “medicine” you can’t tell him to shut up so the rest of the campers can sleep!? Puh. Leeeeez.

ANYWAY! Spending 5 AWESOME days with my family was absolutely awesome. You’d think only living 45 minutes away I’d see them more often, but I don’t. And I miss them. A lot. All the time. For about a month after we got married I cried at least 2-3 times a week. (Stop crying, Mom. I know you’re reading this!) So being with them constantly and talking and eating and hiking and taking pictures was amazing.

While we were there my baby sister, Rudy, turned 12. TWELVE! She already acts 16. Here’s a picture of her when she was one that my mom posted on Facebook.

Before we kicked off our awesome camping trip, me, hubs, sister, and her friend Austin drove 3 hours to Waco to see The Civil Wars! If you don’t know them, you really should. THE most amazing and unique band I know. The concert was at Common Grounds, a small coffee shop on the Baylor campus. First outdoor and small concert I’ve ever been to. I don’t think I’ll ever want to go to a big concert again after Monday night. It was so intimate, so close, and so awesome. Joy Williams is so cute and so genuine! John Paul White is incredibly sweet and their musical chemistry is swoon worthy. They work so well together. I felt like we were all best friends! It’s Friday

Hallelujah. My spring break began about 15 minutes ago when I finished up my online World Lit class for the week. Can you say 100?! (read: the FIRST grade above a 70 I’ve made in 3 months.) Woop!

Is your spring break this coming week? What are you doing? I’m going glamping as I’ve mentioned before. 🙂 SO ready. Quiet time with my hubs and my family? Si, por favor.

Bowling Made Me Sore

My parents head up the college group at our church and Sunday night we went bowling. Ahhh, there’s nothing like sweaty overused shoes, loud obnoxious rap music, and not being able to hear your own voice that really makes you connect with your friends. Or scrolling through your sisters pictures the next day and realizing how bad you need a haircut and to start working out again. Partly because of the pictures and partly because I’m sore today. From bowling. I’m old.

Our friend, Austin, turned out to be a serious pro. I thought at one point the leaguers next to us would recruit him. While he was bowling 130-170 we were bowling 40s and 50s. We aren’t friends anymore.

Saturday the hubs and I went to Laneville’s semi-final basketball game in Tyler. Jason works there as their tech director. It was really a lot of fun. They lost, but played a good game. I had forgotten what it was like to go to a good high school game.

This is my name tag from my audition at University of Texas at Tyler on Friday. Would’ve taken a picture of myself but I was ready to get into my PJs as soon as I got home at 6.

 

So, how was your weekend?

FIRE!

If you’re friends with my mom, Crumbs and Crayons, on Facebook, you’ve probably already seen some of the pictures from when my family came to our house for dinner Saturday night. I made homemade fried chicken, homemade mashed potatoes and corn on the cob. It was SO delicious. But that’s really not the point.

The second before my family walked in the door, I was laying a piece of chicken in the oil with tongs when it slipped from the tongs and splashed 350 degree oil on the floor, my pants, and my feet. I was okay and Jason graciously came and mopped up the floor. A little later when mom was helping me, the lid got stuck on the chicken, because, you know, it wasn’t the right size and all, and the chicken-AGAIN- fell into the oil splashing it on the floor, my pants, and my feet. Jason, again, mopped.

Several full cups of oil out of the pot later, we got the issue under control. Save for it spitting and popping bits of oil all over the floor, counters, and stove.

HOWEVER, we had a delicious meal and a wonderful time full of love, Tyler Perry, kitty play time, and music.

When cleaning up later I noticed there was a significant amount of oil underneath the burner behind the one where I was cooking. Granted there was a significant amount of oil EVERYWHERE, but nothing a little cleaner wouldn’t fix.

This morning I got up, made bacon and eggs and there was no problem. The back burner still looked a little shiny but everything was fine. Tonight I decided to make these shrimp and goat cheese quesadillas via Eat, Live, Run. The recipe calls you to heat your pan to high on the stove to cook the shrimp. Obediently, I did so. My back was turned as I was peeling the tails off the shrimp in the sink.

Suddenly, I heard a deep whoomp. I turned to see what it was and THE STOVE WAS ON FIRE! All I could say was, “OH MY GOSH!” And Jason said, “What? Is something on fire?” (Clairvoyant, much?) He runs into the kitchen immediately morphing into action. Meanwhile, I’m frantically looking for something to put it out with. There was an orange hot pad? No, Melody. That will catch on fire, too! Idiot. Oh! I know! In high school home-ec we learned to put a cookie sheet over a pan to choke out the fire! I barely got the cabinet open when I heard a loud SSSSSSSS! Jason had filled a coffee mug, calmly, and threw it on the fire. Okay, I’m an idiot. OF COURSE that should have been the first thing I thought of! Ugh. But that’s why I married him… for him to be smart for me..?

I stood at the other end of the kitchen with my face in my shirt. Black ashes were flying everywhere. Great. I thought. The cheese was opened. Sure enough, there were black ashes all over our white cabinets. AND the cheese. (Shh! I still used it. :P) We-and by we I mean Jason- set about cleaning the WHOLE stove. He lifted up those silver bowls holding the burners and sure enough, oil was everywhere. Thanks, delicious chicken. Amazing as he is, he cleaned the whole stove while I scrubbed the silver bowls with an SOS pad under an open window. Poor baby Toonces came into the kitchen like nothing happened and sat on the rug just watching us.
